Grilling Technique – You’ve Got the Touch
This week I thought that I would give you a piece of advice that I learned from my time in Italy that I still use today. In 1997 I had the opportunity to work in a rustic and elegant taverna kitchen in Perugia, Italy. It was an international cast of workers and an experience that changed my life. The master grill chef was Iranian and I was always in wonder how he always knew how to cook the meat perfectly with just a look and a touch. Perfect every time. “It’s all about the touch, your senses give you the answer, pay attention with all of your senses and soon you will know too.” He then gave me a visual instruction that I will never forget.
